Chả giò rau củ chiên với lớp vỏ giòn rụm bao lấy nhân bắp cải xào cùng thịt heo, măng và nấm, chấm cùng nước mắm chua ngọt, cay thơm thì ngon biết chừng nào. Thích hợp làm món khai vị cho các bữa tiệc.
Bắp cải rửa sạch thái sợi nhỏ, măng tươi thái sợi, nấm mèo ngâm nở thái sợi. Thịt heo thái sợi cho vào tô, ướp thịt với 1g muối, 10ml rượu trong khoảng 30 phút. Hòa tan bột bắp với 30ml nước lọc.
Đun sôi nồi nước cho bắp cải, măng, nấm mèo vào luộc chín rồi vớt ra. Cho 15ml dầu ăn vào chảo đun nóng, cho thịt đã ướp vào xào săn rồi trút ra đĩa.
Tận dụng dầu trong chảo, cho bắp cải, măng, nấm mèo vào chảo xào qua với 4g muối. Thêm thịt đã xào vào đảo chung. Thêm nước đã hòa tan bột bắp vào đảo chung cho sánh lại. Trải bánh tráng ra thớt, thêm phần rau xào thịt vào rồi cuốn lại.
Bạn làm tương tự với phần nhân và bánh tráng còn lại. Đun nóng nhiều dầu ăn trong chảo, cho các cuốn chả giò vào chiên cho đến khi chín vàng đều là được.
